Lupetta tortiglioni are made from high quality, 100% Italian, Kronos® wheat semolina which gives a bright yellow colour and a higher protein level than standard durum wheat pasta.
When cooking, the pasta releases less starch and retains its al dente texture better for the perfect end dish. These high protein tortiglioni are also perfect for double cooking i.e. if you need to part cook, set aside and then finish cooking briefly later.
Lupetta tortiglioni are formed using a bronze die, which gives the finished product a roughened, powdery surface texture which your chosen sauces will stick to better.
Tortiglioni are a robust yet elegant pasta shape, most popular in southern Italy. These tubular pasta shapes with slanted ridges work particularly well with chunky sauces – and especially with salsiccia (Italian sausage) for a really hearty supper.
